
These brownies are packed with goodness: Vitamin A, B6, potassium, antioxidants, healthy fats and fibre. Dairy & gluten free, & no refined sugar.
It's not surprising that they are different from your usual brownie, with a different sweetness, and sticky texture.
These definitely tick the box for a treat with fab nutrient density.
Recipe:
2 medium sweet potatoes
2 cups pitted dates (soaked overnight) or simmered for 20 mins, (allow time to cool)
coconut oil (I've also tried with almond butter which was delicious too)
1 cup almond meal
1/2 cup buckwheat flour
2 tablespoons almond milk
1 tablespoon raw cacao
3/4 cup vegan chocolate (or quality ethical chocolate) melted
1 tsp baking powder
1/2 tsp Himalayan rock salt
coconut and/or hemp seeds to sprinkle on top. This looks pretty and, you guessed it- adds extra goodness!
Method
Pre-heat oven to 180 degrees
Peel, chop and boil the sweet potatoes. allow to cool (can place in fridge to speed up)
Place the cooled sweet spuds in the food processor with the dates and coconut oil
Add the almond meal, buckwheat, milk, cacao, salt and baking powder - process until combined
Add the melted chocolate and pulse enough to combine
Turn onto a lined tray and bake for 25 mins
Cut into portions to serve or freeze. Cut into small squares and you have the perfect pick-me-up with a cup of tea, or serve with yoghurt, ice cream or fruit. Enjoy.
