Apricot walnut & ginger protein balls

These protein balls are a satisfying snack, providing a good energy boost. The dried fruit gives a hit of sweetness, great texture, fibre and minerals. With protein, healthy fats & fibre, these apricot balls are a balanced between meal bite. They are nutrient rich, with potassium, for heart health, and antioxidants for protecting cells from damage.


They are also super easy to make and to grab & go. Tweak the recipe to your own taste.

Select preservative free dried apricots - they are brown rather than bright orange.


Recipe:

  • 16 dried apricots

  • 40 g walnuts (1.4 oz) (preferably soaked)

  • 50 g cashews (1.7 oz) (preferably soaked)

  • 2 tablespoons coconut oil (raw, virgin)

  • 2 -3 teaspoons fresh finely grated ginger (or 1-2 teas dried ginger)

  • 45 g desiccated coconut

  • Add spice for extra flavour & antioxidants - cinnamon or nutmeg are yum

  • and/or hemp seeds to coat (provides extra nutrients)


Simply process the ingredients in the food processor. If it is too sticky, add more nuts, if it's too dry, add more apricots (or a couple of prunes). Suitable to freeze.
